Durante il Matrimonio Contadino e la Cucina Contadina (”Kastelruther Hoazetkuchl” in dialetto altoatesino vuol dire infatti “Menu Nuziale di Castelrotto”) nei ristoranti della zona vengono serviti piatti tradizionali, le cui ricette sono stati tramandate da generazione a generazione.

In the olden days a peasant wedding was celebrated with dishes like Tyrolean grey cheese with onions (the traditional “Vormas”, that is to say the peasant breakfast), followed by the “Hochzeits-Pfandl” (that is to say the wedding pan) with beans and potatoes, also by dumplings and “Plent” (polenta), or by meat and potatoes with coleslaw salad with bacon and caraway, a dish called “Bauerngröstl”.

Bei der so genannten “Hoazetkuchl”, was im Südtiroler Dialekt Hochzeitsküche bedeutet, werden in den Restaurants altüberlieferte und bodenständige Südtiroler Gerichte serviert, denn mit modernen Rezepten und Menüs hat das Bauernhochzeit-Menü nichts zu tun. Bei der Zubereitung halten sich die Kastelruther Köche streng an die Vorschriften der hiesigen Küchentradition sowie an die Originalrezepte.
