Je vous propose aujourd’hui une réinterprétation de ce homard qui traduit l’évolution de ma cuisine et résulte notamment de mon travail de recherche autour des sauces. Je cherche de plus en plus l’équilibre, la note juste dans mes sauces. Je les dépouille du beurre et de l’huile pour les créer au plus proche de la nature. Ce qui m’intéresse c’est la vivacité et la quintessence du goût. Pour ce homard, j’ai imaginé un dashi aux fruits rouges. Le dashi c’est une base de la cuisine japonaise que j’adore. C’est un bouillon d’algues kombu et de copeaux de bonite séchée. C’est en quelque sorte une infusion d’iode, d’une grande pureté qui peut s’aromatiser et permet donc une grande complexité aromatique. Classiquement, les Japonais distinguent le premier bouillon subtile et délicat, appelé ichiban dashi du deuxième niban dashi, réalisé à partir du précédent. J’ai choisi d’utiliser l’ichiban dashi car il laisse plus s’exprimer l’acidité des fruits rouges tout en leur apportant une note boisée.
